Cruciferous vegetables are non-starchy vegetables that contain dietary fiber, folate, and vitamin C. These nutrients have all been shown in studies to lower your risk for several cancers, including skin and liver cancer. So which vegetables are cruciferous? Broccoli, brussels sprouts, rapini, green cabbage, cauliflower, turnips and dark green leafy vegetables like kale and collard greens fall into this category. Steam, microwave, stir-fry or sauté these vegetables to help them retain their nutrients.
